There are so many deer sausage recipes that can be made from your venison that you can choose from. It basically all goes by someone’s taste and how they like it done.
One way is to smoke sausage in a smoker and use different types of wood to give it the smoky taste you prefer the most. Some people like sausage links and others prefer sausage patties for breakfast with their eggs. It’s all a matter of taste!
A good tip before using the deer sausage recipes for sausage links is to grind and mix a small amount of meat and seasonsing into a sausage patty first to see how it tastes. Then move on to making a large quantity of links.
Making sausage links is a lot more time consuming than mixing and making sausage patties so keep this in mind before you start the process.

Venison Italian Sausage Links using a Sausage Stuffer
5 lbs. ground venison
1 ½ tbsp. ground black pepper
5 tbsp. fennel seeds
3 tbsp. parsley
4-5 cloves minced garlic
Salt (to taste)
Use a meat grinder to grind the venison then place in a large bowl.
Add the spices and seasonings to the ground meat and mix thoroughly either by hand or with a meat mixer.
After thoroughly mixing, you can then use a sausage stuffer to stuff the sausage meat into casings. Cut the links apart and vacuum seal them for storing in the refrigerator or freezer.
Breakfast Deer Sausage Patties
1 lb ground venison
1 tablespoon olive oil
1 egg (optional)
1 minced garlic clove
1 tsp sea salt
1 tsp pepper
1 tsp molasses
1 tbsp brown sugar
½ tsp thyme
1 tsp oregano
1 tsp sage
1 tsp chili flakes (optional-adds some spice)
Mix all ingredients except egg in bowl.
Refrigerate for 1 to 4 hours.
Mix in egg (if desired).
Shape into 3-4 in. patties, 1 in. thick.
Grill or pan fry just like you would a burger.
